Baked Bean cassoulet

Finally had the baked bean cassoulet last night, that was recommended by Virgil Evetts over at Foodlovers.co.nz

It was a budget meal to say the least. Only expensive ingredients were bacon and four small chorizo.  I do have to say that chorizos are pretty reasonably priced in the deli at Third World Devonport.

The dish was a real hit. Even with me – the great baked bean hater.  Definitely worth doing again. And I might cook some regular cassoulets in the near future. Bean-based meals usually go down reasonably well in this household.

    I have now found the BB cassoulet – what brand of BB did Virgil suggest.

    I don’t actually have any BB in my pantry (oops read kitchen cupboards) – I’m more into have just the raw beans and dealing to them that way…

    Can you freeze the cassoulet as well?

    I could probably find the answers but I’m all answered out today – this arvo a test on the Pop music industry in NZ!

    I used one can of Oak and one can of Watties. I’m sure it would freeze well. One of the aspects of the recipe that I really liked was the bread crumbs. Sounded odd in the recipe, but worked really well in practice.
